INGREDIENTS:
-
2 scoops best-quality chocolate whey protein powder
-
Water
-
Microwave-proof mug
DIRECTIONS:
-
Place protein powder in mug.
-
Whisk in 2 Tbsp water, stirring well until protein is dissolved, and batter is virtually lump-free. If needed, add more water, 1 Tbsp at a time, mixing well before adding more water. The goal here is to achieve a cake-batter consistency.
-
Microwave 45 seconds on HIGH. End product will be spongy, and slightly undercooked near the bottom of the mug.
Mangia!
IMPORTANT!
-
Be careful not to add too much water! It will ruin the flavor, and make it hard to cook.
-
If necessary, microwave an additional 15 seconds...CAUTION! Overcooking the cake will yield a brick, rather than a dense, moist cake.
-
This cake should be prepared just before eating. If made ahead of time, the cake gets tough, and almost impossible to chew.
Add your favorite flavorings to the batter:
-
A few dashes of ground cinnamon
-
Chili powder (Seriously! Start with 1/8 tsp)
-
¼ tsp Instant coffee granules (or substitute brewed coffee for the water)
-
1-2 tsp PB2
Add your fat source to the batter:
-
Flax meal
-
Almond meal
-
Chopped nuts
-
Macadamia nut oil, etc
-
Peanut/Almond Butter
***Your peanut/almond butter can make an awesome frosting! Spread it on the baked cake as-is, or mix it with a little of the dry protein powder and some stevia for a chocolate-peanut butter frosting!
